Springtime is strawberry season and what better way to celebrate spring that with a strawberry lemonade bundt cake. Its just screams spring, perfect for dessert or tea!
I haven't made a lot of bundt cakes in my life but for some reason they always remind me of My Big Fat Greek Wedding, haha. No there is not a hole in my cake its a bundt!
Bundt cakes are so timeless and classy looking, you can have so many flavours and so many bundt shapes, this spring time bundt cake made me want to have friends over for tea and cake. Strawberries and lemons go together so well so I thought why not try lemonade? Drizzled with a lemonade glaze and also flavoured with some lemonade this bundt has a beautiful refreshing lemonade flavour. Using greek yogurt is alway a great idea because it made for a super moist and delicious cake.
Once we can get together for BBQ's this summer (fingers crossed) This will be the perfect dessert to impress your family and friends. Its a quick and easy treat that tastes like spring.
Strawberry Lemonade Bundt Cake
Ingredients:
- 1 cup butter, softened
- 2 cups white sugar
- 3 eggs
- 4 tablespoons lemonade
- zest of 1 lemon
- 2 1/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 cup + 1 tablespoon plain greek yogurt
- 2 cups strawberries, chopped and tossed in 1/4 cup flour
-2 tablespoon lemonade
- 1 cup powdered sugar
Instructions:
Preheat oven to 375F and grease and flour a 10 inch bundt pan, set aside.
In a medium bowl combine flour, baking soda, salt and lemon zest. In the large bowl of your stand mixer cream together the butter and white sugar until light and fluffy, about 5 minutes. Add eggs one at a time, beating between each addition. Stir in lemonade.
Alternate adding your flour mixture and greek yogurt, mixing on medium low until just incorporated. Toss the strawberries in 1/4 cup of flour and then gently fold the strawberries into cake batter.
Pour batter into greased bundt pan and place in preheated oven. Lower heat of the oven from 375F to 325F once bundt cake has been put in the oven. Bake for 60 minutes of until a toothpick inserted to the centre of the cake comes out clean
Remove cake from oven once baked and let cool on a wire rack in the bundt pan for at least 20 minutes. Then turn the cake out onto a wire rack and let cool completely.
Mix icing sugar and lemonade until smooth and drizzle over the cooled bundt cake. Serve for dessert or with tea.
