Rosemary Garlic Focaccia Bread

Updated: Apr 19, 2020

Fresh from the oven, crispy on the outside soft and delicious on the inside. Who doesn’t love focaccia bread.

Bread is a wonderful thing and learning to bake bread is even better. It’s a life skill that I’m very happy to continue to work on. Focaccia is one of my favourite kinds of bread and it’s very simple to learn how to make.

Top this delicious bread with whatever herbs and toppings you like. Serve focaccia warm with a side of olive oil and balsamic vinegar.

Rosemary Garlic Focaccia Bread

Ingredients

- 2 Tablespoons olive oil to drizzle in pan

Dough:

- 1 1/2 cups warm water

- 1 tablespoon quick rise yeast

- 3 tablespoons olive oil

- 1 1/4 teaspoons sea salt

- 3 1/2 cups all purpose flour

Toppings:

- 1 teaspoon sea salt

- 3 garlic cloves, minced

- 1 tablespoon fresh rosemary, chopped

- 2 teaspoons dry oregano

Instructions:

1. Drizzle olive oil in a 9”x13” pan.

2. Combine yeast and warm water in large bowl. Let sit for 10 minutes until yeast is foamy.

3. Add remaining ingredients to yeast mixture.

4. Knead dough until soft and smooth - about 2-3 minutes or 60 seconds in stand mixer with dough hook. (dough should feel a little sticky)

5. Place dough in prepared pan and press out to fit the pan.

6. Cover with towel and let rise at room temp for 1 hour.

7. While waiting preheat oven to 375F

8. Once dough has risen drizzle with about a tablespoon of olive oil and gently poke the dough all over to create little craters

9. Sprinkle with sea salt, rosemary, garlic and oregano.

10. Bake until golden brown, about 35 minutes. Once you remove from oven let sit for 5 minutes before removing from pan. Best served warm.

Focaccia before it goes into the oven

Focaccia can be eaten fresh with balsamic vinegar, served with soup, used to make grilled cheese and made into croutons once it’s too dry. Those are just the ways I like to use focaccia, there are so many more ways to try!
