Bagels and cream cheese a match made in heaven. Everything bagels with herb and garlic cream cheese... yum!

Sandy Cohen‘s breakfast of choice, bagel and schmear such a classic!
This was my first attempt making bagels from scratch and it was a pretty good attempt. They were a lot easier to make than I thought they would be, a little time for the dough to rise. A nice way to start your morning would be toasting a freshly made bagel and spreading on some flavoured cream cheese.
Bagels are first cooked in a pot of simmering water/honey for about 1 minute on each side. After that you coat them with an egg wash and top them with your everything mix. At this point your bagels are them ready to bake for 25 minutes until they are nice and golden. I took some pictures of a couple of the steps to show you the progress.

Making your own flavoured cream cheese is very simple, and you can go with any flavour combo you like.

Everything Bagels
Ingredients:
For bagel dough
- 1 1/2 cups warm water
- 2 1/4 teaspoons active dry yeast
- 4 cups all purpose flour
- 1 tablespoon brown sugar
- 2 teaspoons sea salt
For water bath
- 2 quarts water
- 1/4 cup honey
For Everything topping
- 2 tablespoons poppy seeds
- 2 tablespoons sesame seeds
- 1 tablespoon onion flakes
- 1 tablespoon minced fresh garlic
- 1 tablespoon seat salt
- 1 egg beaten with 1 tablespoon water
Instructions:
1. For dough. Mix yeast into warm water and let sit for 5-10 minutes to let yeast activate.
2. In a large bowl mix flour, brown sugar and salt. Add yeast mixture to flour and using a spoon mix liquid in. Dough will appear shaggy and not smooth. Turn dough out into counter.
3. Knead dough for 10 minutes until dough is smooth. (This dough is stiff when kneading)
4. Shape the dough into a ball and place in a lightly greased large bowl, turning it to coat all sides of dough in oil. Loosely cover with damp tea towel and let dough rise at room temp for 90 minutes. Dough won’t double in size but will get larger.
5. Line two cookies sheets with parchment paper. Place a wire rack over third cookie sheet. Set aside.
6. When dough is risen, gently punch it down. Turn it out onto a clean surface, it will still be a little stiff. Divide the dough into 8 equal pieces. Form 8 balls and place 4 on each cookie sheet with parchment. Take each ball of dough and poke your index finger through the middle, add a second finger and slowly make the hole larger. You want the hole to be about 2 inches in diameter. Cover your shaped bagels with damp tea towel and allow them to rest while you prep the water bath.
7. Fill large pot with water and whisk in the honey. Bring water to a boil and then reduce heat to medium high heat so the water still simmers. Drop bagels in 3 at a time so they have enough space to float around. Cook bagels for 1 minute on each side. Transfer each bagel to the wire rack cookie sheet using a slotted spoon. They may look a little funny but that’s okay.
8. Mix together your everything mix ingredients. Brush egg wash over each bagel and sprinkle each with your topping mix.
9. Place 4 bagels back on each of the cookie sheets with parchment on them. Bake one sheet at a time for 20-25 minutes, turn your pan around halfway through cooking. Bagels should be a nice dark golden brown. Cool bagels on a wire rack.
Herb and Garlic Cream Cheese
Ingredients:
- 1 package of cream cheese (8ounces)
- 1 tablespoon fresh parsley, chopped
- 2 garlic cloves, minced finely
- 1/2 teaspoon ground thyme
- 1/2 teaspoon dried basil
- salt and pepper to season
Instructions:
1. Combine all ingredients in a bowl and mix until well combine.
2. Spread on fresh bagels and enjoy.

Whenever I think about bagels and cream cheese I’m instantly reminded of Sandy Cohen from The OC, haha. I will definitely be doing a some experimenting to really perfect a great bagel dough but this one worked pretty well! You can make any flavour of cream cheese spread you can think of to enjoy with your bagels.
Maybe next time I’ll try a sweet bagel and a sweet cream cheese, love a good blueberry bagel.
