Cactus Club: Rob’s Crispy Chicken Sandwich Copycat

This ones for Megan! Its always an amazing idea to eat out at a restaurant known for great food. Cactus club is one of my favourite restaurants to go, but during quarantine what’s even better?? Making a copycat version of one of their most popular dishes.


This recipe was quick and tasty. I also made the brioche buns but I will be posting that recipe tomorrow.

The Panko crusted chicken was shallow fried in avocado oil for a couple minutes to make it crispy and then finished cooking in the oven.

The sambal mayo was a super quick make as well, sambal is a pepper paste you can find at most grocery stores. I mixed the pepper paste with avocado mayo and let it sit in the fridge before using it.

The toppings are the usual suspects for a burger, lettuce, tomatoes, onion, dill pickles and Swiss cheese.


Such a great recipe to really feel like you are eating out for supper without having to leave your house. Make some homemade fries or a tossed salad to compliment this crispy sandwich.

Cactus Club: Rob’s Crispy Chicken Sandwich Copycat

makes two chicken sandwiches



Ingredients:


For chicken

- 2 chicken breast, slightly flattened using mallet or rolling pin

- 2 tablespoons flour

- 2 eggs

- 1 cup Panko bread crumbs

- 1 teaspoon sea salt

- 1/4 teaspoon black pepper

- 1/2 teaspoon garlic powder - 1/2-2/3 cup avocado oil (for frying)


For Sambal mayo

- 1/3 cup avocado mayo

- 1 1/2 tablespoons Sambal paste


For burger

- 2 brioche burger buns

- 1/2 shredded lettuce

- 6-8 slices of red onion, thin

- 4 slices of tomato

- 4 slices of tangy dill pickles

- 2 slices Swiss cheese

- 2 tablespoons sambal mayo (tablespoon for each bun)


Instructions:


1. Preheat oven for 375F. Place a wire rack onto a cookie sheet and spray with cooking spray.

2. In a large frying pan place 1/2 - 2/3 cup of avocado oil and turn heat to medium high.

3. While oil is heating grab three separate bowls, one for flour, second for eggs and third for Panko crumbs, sea salt, black pepper and garlic powder. Drudge chicken through flour, then egg then Panko crumbs. Dip chicken in egg a second time and coat with Panko crumbs again.

4. Test oil by sprinkling a couple bread crumbs in, crumbs should bubble when added to oil. Slowly place coated chicken breast into hot oil and cook on each side for about 2 minutes each or until sides are golden brown.

5. Remove chicken from oil and place on greased wire rack, place in oven and finish cooking the chicken, about 15 minutes.

6. While chicken is cooking stir together mayo and sambal paste, let sit in fridge until ready to assemble burger.

7. Slice burger buns, in medium frying pan melt butter at medium heat and swirl inside of buns in melted butter to coat each bun, let buns sit in pan to brown.

8. Once chicken is finished place sliced Swiss cheese on top of chicken and let melt slightly, then remove from oven.

9. Assembly time; on toasted bun spread 1 tablespoon of sambal mayo on top and bottom. Start stacking, chicken with melted Swiss on bottom bun, then red onion, tomatoes, pickles and lettuce. Place top bun half on and stick a toothpick in the middle to keep everything together.

Voila!

Served best with homemade fries or a tossed salad.


I love a good cooking challenge and making a copycat recipe was so much fun! This was a recipe request from a friend and I will definitely take some more requests so send them my way!
