Autumn Harvest Salad

Crunchy pecans, creamy goat cheese and sweet pears make this spinach based salad mouth watering.



I‘ve always thought salads would be eaten more if they were delicious, a really easy way to make a salad more tasty is to add nuts, cheese or fruit. A homemade vinaigrette or dressing helps too. This salad uses an easy balsamic vinaigrette to really bring out the flavour of the pears, balsamic vinegar also pairs really well with goats cheese.


Autumn Harvest Salad

makes single serving for salad, extra dressing


Ingredients:

Salad:

- 1 cooked chicken breast, seasoned with salt and pepper and sliced

- 2-3 cups spinach, washed

- 1 cup romaine lettuce, washed

- 1/2 Bartlett pear, chopped

- 1/4 cup dried cranberries

- 1/3 cup pecans, roasted

- 1/4 cup goats cheese, crumbled


Dressing:

- 3 tablespoons balsamic vinegar

- 1 tablespoon honey Dijon mustard

- 2 garlic cloves, finely minced

- 1/2 cup extra virgin olive oil

- 1/4 teaspoon sea salt

- 1/8 teaspoon black pepper


Instructions:


1. In a medium sized frying pan, toast pecans over medium high heat until lightly golden and fragrant. Remove from heat and cool.

2. In a large mixing bowl, combine spinach, chopped romaine, pears, dried cranberries, toasted pecans, crumbled goats cheese and cooked chicken.

3. combine all dressing ingredients in a small mason jar, cover with lid and shake to combine. Drizzle the balsamic vinaigrette over the salad and toss.
